Creamy Tomatillo Dressing Recipe, aka Cafe Rio Dressing!



Today I am sharing a very easy recipe
that is a big hit with my family!
I know that the Cafe Rio/Creamy Tomatillo Dressing Recipe
is all over the internet.
I have changed it up just a touch so that 
I can eat it while on the Dukan Diet as well.

I don't want to be a short order cook
so I am always looking for family favorites,
and figuring out how I can tweak it
to follow my diet. 
This was a huge success!

This is completely Protein Veggie Day approved
for fellow Dukan Dieters!

So to start,
I throw a bunch of FROZEN chicken breasts
into my crockpot 
with a jar of salsa.
I use the Costco Kirkland brand Organic Salsa.
There really isn't any specific measurements.
Approximately though,
I put 5 breasts and a half a large jar of salsa.
I cook it on high for about 5 hours
until it is easily shreddable!
Can I just say this is so easy 
and can be used in so many different recipes!

I don't even take the chicken out of the crockpot.
I get two large serving forks
and shred away!
Piece o' Cake!



Most Cafe Rio/Creamy Tomatillo recipes
call for mayonnaise.
That isn't approved on my diet,
but fat free sour cream is.
The dressing is fantastic with the sour cream.
The recipe also calls for buttermilk.
I make my own.



First think I do is make my buttermilk.
Do this,
I put 1 cup of milk in a 
pyrex mixing cup and add 1 Tbsp of vinegar.

I let this sit for a few minutes
while I prep my tomatillos and cilantro.
It will kind of thicken,
but you have Dukan Diet approved buttermilk.





These are my tomatillos dehusked and cored.
I have a strong blender so I just dump them in whole.
A side note, when you peel of the husk,
the tomatillos are kind of sticky.
Rinse with warm water and it comes right off.


Creamy Tomatillo Recipe-

1 buttermilk ranch dressing packet
1 cup buttermilk
1 cup fat free sour cream
2 tomatillos, husk removed and decored
1-2 garlic cloves
juice of 1 lime
1/2 jalapeno (add seeds to reach desired heat)
1/2 bunch cilantro

Place all items in the blender
and blend until smooth.



I double the recipe and keep it in the fridge
for a week.
My family loves it that much and 
loves the leftovers!


In the end,
we have kind of a smorgasbord dinner.
It is buffet style and everyone can do their own thing.

I have out, buffet style:
 shredded chicken, black beans, shredded cheese,
lime rice, chopped jicama, diced tomatoes,
cilantro, the dressing, 
and corn and flour tortilla's.

My family can choose salad,
burrito's or tacos. 
And everyone is happy.
